AVOCADO PUDDING

Avocado - 1
Milk - 1 1/2 cups
Water - 1 cup
Sugar - as required
* Make avocado juice with the above ingredients.
Gelatin - 1tsp
Hot water - 3tbsp
Milk - 1 cup
Condensed milk - 1/4tin
Vanilla essence - 3 drops
* Mix gelatin with hot water and keep it aside for 5 minutes.
* Heat milk in a bottom thick pan.
* Mix in avocado juice, condensed milk and vanilla essence. Stir continuously.
* Don't boil the mixture. Turn off the flame after a few minutes and immediately mix in melted gelatin.
* Convert it to a serving dish and chill it for few hours or until set.
* Before serving, sprinkle sweet roasted coconut.
