GHEE CAKE

Half ground sugar – 100g, (1/2 cup + 2tbsp)

Flour – 80g, (3/4 cup)

Eggs – 3

Pure ghee – 60g, melted, (1/4 cup)

Salt – a pinch

Milkmaid – 40g (2tbsp)

Baking soda – a pinch

Steps

* Preheat the oven.

* Melt butter and let it cool

* Sieve flour with baking soda.

* Boil water in a steel pot. Beat eggs in a steel pot placed on top of the pot with boiling water. (double boiling)

* Switch off flame and continue beating.

* Add half ground sugar and beat again.

* Fold in the sieved flour, with a spatula.

* Fold in the condensed milk, and melted ghee.

* Grease and dust the loaf tin. Cover with butter paper.

* Pour the mixture. Tap tap tap !!! (to remove air bubbles).

* Bake at 180 c for 25 to 30 minutes.

* Let it cool. Unmold.

Tips:

After 10 to 15 minutes open the oven and if the crust has turned deep brown, then place an Aluminium foil on top of the tin and close the oven and complete the baking. This is done to avoid burning the top of the cake.
